α-galactosidase is an enzyme used to hydrolyze or break α-1, 6-glycosidic bonds into galactosyl oligosaccharides (α-galactosides), liberating simpler, more usable sugars and eliminating its anti-nutrient effect. Thus, it improves the utilization of the energy and proteins in raw materials.
One α-galactosidase Unit (U/g) is defined as the amount of enzyme required to release 1 μmol of p-nitrophenol from 10 mmol/L p-nitrophenol-α-D-galactopyranosyl per minute at 37℃ and pH 5.0.
α-galactoside (such as raffinose and stachyose) is an anti-nutrient factor presenting in lots of plant seeds, especially the bean seeds have much high concentration. The α-galactosidase can degrade the α-galactoside into galactosyl oligosaccharides, which can not only eliminate the anti-nutrient effect but also provide energy. It can also synergize with β-mannanase to hydrolyze galactomannans contained in bean gums.
