Product Overview
Cellulose is a high molecular polysaccharide composed of glucose by β-1,4-glycosidic bonds. The degradation system of cellulase includes three main components: endoglucanase (EG), cellobiohydrolase (CBH), and β-glucosidase (βG). Endoglucanase acts on the surface of insoluble cellulose, destroying its crystal structure and exposing the inner cellulose chain to make it easy to be hydrolyzed. Cellobiohydrolase hydrolyzes the exposed cellulose chain into 2 or 4 units of oligosaccharides. Eventually, oligosaccharides are degraded into glucose monosaccharides by β-glucosidase. Cellulose can be completely degraded into glucose by the synergistic action of the above enzyme system.
With advanced microbial fermentation technology and post-processing technology, Habio cellulase can effectively degrade cellulose into oligosaccharides, improve the utilization rate of feed, increase the usage amount of unconventional raw materials, and reduce costs. Product Functions
1. Fruit and vegetable processing.
Most fruits and vegetables contain cellulose in varying degrees. The proper treatment of cellulase in the processing of fruits and vegetables can soften the plant tissue, improve the taste and simplify the process. The degradation of cellulose by cellulase can promote the extraction and clarification of fruit juice, increase the content of soluble solids, and comprehensively utilize the peel residue.
2. Application of cellulase in soybean processing and instant noodles.
When cellulase is used to treat soybean, it can promote its peeling, at the same time, because it can destroy the cell wall, completely separate the protein and oil contained in it, and increase the yield of extracting high quality water-soluble protein and oil from soybean and soybean cake. it not only reduces the cost, shortens the time, but also improves the product quality. In the application of instant noodles, enzyme preparations (glucose oxidase, hemicellulase, cellulase, lipase) were pre-mixed with flour and scored in terms of crispness, elasticity, gluten strength, smoothness and foam resistance. the bubble eating effect of instant noodles can be improved to a certain extent.
3. Application of cellulase in the production of instant tea.
Instant tea is convenient to drink, so it is required that there is no residue after instant dissolving. Hot water extraction is often used to extract the effective components of tea in production. If extracted with cellulase at low temperature, it can not only improve the yield, but also maintain the original color and aroma of tea. The combination of boiling water soaking and enzymatic method can not only shorten the extraction time, but also improve the extraction rate of tea tannins with poor water solubility.
4. Application of cellulase in beverage industry.
The fermented beverage with high nutrition and high taste can be prepared by adding lactic acid bacteria to ferment bean curd residue treated with cellulase. The application of cellulase in fruit and vegetable juice and pollen beverage can improve the extraction rate of juice, promote juice clarification, make juice transparent and non-precipitate, increase the content of soluble solids, and comprehensively utilize peel dregs. Part of the crude fiber is degraded into short-chain oligosaccharides, which has a certain health care value.
Definition of Activity
One Cellulase Unit (U/g or U/mL) is defined as the amount of enzyme required to release 1 μmol of reducing sugar from a sodium carboxymethyl cellulose solution with a concentration of 5 mg/mL per minute at 50℃ and pH 4.8. (Reducing sugar is equal to glucose.)
