Phytic acid, namely cyclohexanol hexaphosphate, which exists in large quantities in plant seeds and pollen, is an anti-nutritional factor with strong chelating ability and can chelate with a variety of minerals such as calcium, magnesium, iron and zinc to form insoluble complexes, accounts for 60%-80% of total phosphorus in raw materials. The effects of some digestive enzymes such as protease, amylase and trypsin are also inhibited by phytic acid, thus reducing the digestion and utilization of protein, starch and lipids, and reducing the utilization of various trace elements and amino acids.
Phytase is a special kind of acid phosphatase, which belongs to phosphate monoester hydrolase. Phytase exists in the seeds and pollen of many plants, but the activity of phytase varies greatly with different kinds of plants. The activity of phytase in rye, wheat, barley and wheat bran is very high, while the activity of phytase in oat, corn, soybean cake and rapeseed cake is very low. One Phytase Unit(U) is defined as the amount of enzyme required to release 1μmol of inorganic phosphorus per minute from 5.0 mmol/L sodium phytate at 37℃ and pH5.5.
