Habio Fungal Alpha-amylase is obtained by liquid submerged fermentation. It helps to hydrolyze the starch to small molecule dextrin and maltose, which is Mainly used in flour, flour improvement in the baking industry, and enhancement of the quality of terminal processing.
One unit (U) of enzyme activity is defined as the 1g of solid enzyme powder hydrolyze starch to produce reducing sugar equivalent to 10mg glucose in 30 min at 40℃ and pH5.0.
a. Optimum temperature: 30℃-65℃;
b. Optimum pH: 4.5-6.5;
c. Strong temperature tolerance in 60℃, strong pH tolerance in pH2.5-10.0, strong resistance to protease;
d. Good stability, adapted to different industries.
