β-Glucan is a kind of non-starch polysaccharide, which is one of the most important anti-nutritional factors in wheat and meal feed materials. Its main anti-nutritional effects are as follows: a) the plant cell wall contains a high amount of β-glucan, and its encapsulation effect can reduce the diffusion rate of nutrients and the probability of contact with digestive enzymes, thereby reducing the utilization rate of nutrients. b) it will increase the viscosity of chyme, enlarge the volume of intestinal tract after absorbing water, reduce the diffusion rate of enzymes and substrates, and prevent the digested nutrients from approaching the mucosal surface of small intestine. c) β-glucan can also combine with some digestive enzymes and bile salts, affecting these substances to assist digestion.
One unit (U) of glucanase is defined as the amount of enzyme which generates 1 μmol reducing sugar per minute from 4 mg/mL β-glucan solution at pH 5.5 and temperature of 37 °C.
