Xylan is an important component of hemicellulose, which widely exists in a variety of plant resources. Xylanase is a hydrolytic enzyme of xylan, which is widely used in food industry.
The amount of enzyme required to degrade and release 1 µmol reducing sugar from 5 mg/mL xylan solution per minute at 37℃, pH 5.5 is defined as one unit of enzyme activity (U).
1. Application in the production of flour products.
Xylanase is mainly used in the improvement of wheat flour in food industry. The non-starch polysaccharides in wheat flour are mainly pentosans (the main component is arabinoxylan, of which water-soluble arabinoxylan accounts for about 20%, about 30%, and water-insoluble arabinoxylan is about 70%, about 80%). Although its content in the flour is very small (about 2% of the dry basis of the flour), it has a significant effect on the rheological properties and flour quality of the dough. Adding proper amount of xylanase to the bread production can obviously improve the operation of the dough, increase the volume and specific volume of the bread, and improve the elasticity, hardness and softness of the core.
2. Application in health products.
The application of xylanase in health products mainly refers to the enzymatic production of functional xylo-oligosaccharides. Xylo-oligosaccharides have good physiological function, it is difficult to digest in human body (high residual rate in intestinal tract), and has excellent proliferation effect of Bifidobacterium, as long as the daily dosage of adults reaches 0. 5%. 7g, it has obvious proliferation effect of Bifidobacterium, which is much lower than the dosage of other oligosaccharides. In addition, the sweetness of xylo-oligosaccharides is only 40% of that of sucrose, and it has good acid-base stability and thermal stability. It does not cause a rise in blood sugar levels after consumption, and can replace glucose as an effective food for people with diabetes.
3. Application in fruit and vegetable processing.
In the past, people thought that as long as there was a certain amount of Pectinase, pectin could be hydrolyzed and the juice yield could be improved, but the result was not ideal. Later, it was found that the reasonable combination of xylanase, cellulase and Pectinase could destroy the cell structure of fruits and vegetables and improve the juice yield under mild conditions. At the same time, because the compound enzyme decomposes pectin and hemicellulose in fruits and vegetables, it reduces the viscosity of fruit juice, thus accelerates the outflow of fruit juice, shortens the pressing time and improves the production efficiency of the factory. In addition, some hemicelluloses such as xylan were decomposed into water-soluble substances under the action of enzymes, which also increased the content of soluble solids in beverages.
a. The combination of high activity of endo-xylanase and exo-xylanase efficiently acts on soluble and insoluble xylan at the same time with high efficiency of hydrolysis.
b. Better thermostability than general fungal xylanase. The relative enzyme activity remains over 80% at 80℃. Strong pH tolerance in pH2.5-7.5, strong resistance to digestive enzymes and high storage stability;
c. Habio xylanase has high activity from 30℃-75℃, the optimum temperature is 60℃.
d. Habio xylanase has high activity from pH4.5-7.5, the optimum is pH=6.5.
e. Optimized strain fermentation, advanced liquid submerged fermentation and post-process treatment, good stability and high efficiency.
